2 carrots, scrubbed. 1 large parsnip, scrubbed. 1 small turnip, scrubbed. 1/2 rutabaga, scrubbed. 1 sweet potato, scrubbed. 1 large red onion. 2-3 tbsp. vegetable oil. 1 tbsp. finely chopped fresh rosemary. 2 tsp coarse salt. 1/4 cup freshly chopped parsley. Cut all vegetables into 2-inch cubes. Toss in a bowl with the olive oil and salt.Spread vegetables in a single layer so they don’t touch on a sheet pan.
