Breakfast of Champions Casserole. 1 lb chicken sausage, lightly browned (or pre-cooked). 1 sweet potato, roasted. 1 cup chopped bell peppers. 2 cups raw spinach, steamed. 1/2 onion, diced. 1 cup almond milk, unsweetened.
