Chocolate and Black Bean Brownies. 2 cups/470ml precooked black beans, rinsed if from a can. 1 cup/235ml brown rice flour (milled in coffee grinder). 1/4 cup/60ml cocoa powder. 1 tsp/5ml guar gum. 1 1/2 tsp/7.5ml baking soda. 1 tsp/5ml cream of tartar. 1/2 cup/120ml brown sugar. 1/4 cup/60ml corn free powdered sugar (or more brown sugar). 3 tablespoons/45ml light cooking oil.

I developed this recipe when I didn't have any lasagna noodles and really wanted lasagna. Then I saw the tortilla's in the fridge and the light bulb came on. Why not use them and switch up the flavors to making is a Mexican dish, instead of Italian? 1 lb ground beef. 1 Tsp chili powder. 1 clove of minced garlic. 2 dashes of red pepper flakes (or to taste). 1/2 white onion chopped.

It's hard to know what flours are good for what and if you can even substitute. Here is a quick reference to help sort out those questions. Almond- baked sweets like cakes, cookies, muffins, and sweet breads. Alternates- other nut flours, coconut, and sorghum. Millet- all purpose and good for: pancakes, breads, cookies, and cakes. Alternates- sorghum and brown rice.

Have you ever had to cook for someone who just had a baby or just got out of the hospital and you want to bless them with a meal and they are not gluten free? I'm part of the meals ministry at my church so once in awhile I have to cook for someone else. Dried pasta, usually macaroni. Hamburger helper or rice-a-roni (boxed items like these are very covenant and keep the pantry clean).
