Last weekend My husband Scott and I were able to attend a special dinner that our friend, Engine 2 diet. Coach, and plant-based certified professional chef from Rouxbe cooking school. Char Nolan was heading up with her chef friend and owner of Vge café, Fernando Peralta! The meal was held at Vge Café. Next we had a velvety cream of tomato and red pepper soup!

My husband was craving noodle soup this week and I finally decided to make it for him. Two bowls later, I’m not sure if I really made it for him, or for myself! Here is my version of Tom Yum Soup which I call “Scott Yum Soup” named for my husband Scott. I finally looked up Tom Yum soup and it appears I am missing lemongrass, so maybe next time! 64 oz veggie broth.

We had two types of raspberry – Glen Ample and a Golden variety, we had strawberries and a young gooseberry bush. As they were all in their first years I wasn’t expecting much.
