It has a relatively small ingredient list but this meal can be kind of lengthy to prepare because of the eggplant as you will read below. There is some debate on the internet over the necessity to salt the slices of eggplant to leech the bitterness. I do it anyway but, a lot of the bitterness in the eggplant is in the peel. It definitely strays from the conventional idea of chili so its unique flavor may not be for everybody. Andy chose this as something new for us to try. This was also the first time cooking with tomatillos. Such a strange little fruit. Seriously, everybody should buy it. 1 lb baby Yukon golds, cut into 1/2" pieces. 2 T vegetable oil. 4 cloves garlic, minced.

We were so excited to see D again and meet the lovely A in the flesh. It was a wonderful ceremony and we were very grateful to be apart of it as photographers as well! Can (28 ounces) whole tomatoes, undrained. Can (6 ounces) tomato paste. Cup chopped fresh parsley. Teaspoon dried basil leaves.
