Thursday, May 14, 2015. Our sweet Tyson turned 3 months. Old on April 15th. He is seriously the happiest. Baby I have ever seen. He loves. To smile and laugh! He also thinks it is so funny. When I change his clothes. Madilyn always hated. Having her clothes or diaper changed, and still does. Tyson, however, seems to think it's the greatest. Just like Madilyn, he hated his bath. At first. Now he gets so happy. And smiles and laughs through the whole thing. Unlike Madilyn, he hates. And loves to kick.

Sunday, May 25, 2014. 4 boneless skinless chicken breasts, fat trimmed. 15 tsp garlic powder. 1 20 ounce can pineapple bites packed in juice not heavy syrup (keep 1/2 c. of the juice). 1/4 cup honey (raw honey is best). Juice of three limes or 3 Tbsp lime juice (fresh will taste better but either will work). 2 Tbsp low-sodium soy sauce. I found this online. I am going to try it. Trevor and Colette Riley. Chicken Fajita Southwest Salad. 3 Romaine Lettuce Hearts, chopped. 1 Can Chipotle Corn, drained. 1 Can Black Bean, rinsed and drained. 1 Red Pepper, chopped. 1 Avocado, diced. 1 Bunch Green Onions, chopped. 2 Roma Tomatoes, diced. 1 Bunch Cilantro, chopped. 1 Cup Colby Jack Shredded Cheese. 1 Package Santa Fe Style Tortilla Strips. 2 Cups Chicken, cooked and sliced. 1/2 Cup Light Sour Cream. Mix together the salsa and sour cream in a small bowl. Top with 1/2 of the dressing and toss.

Spinach and Fruit Summer Salad. 10 oz bag of fresh spinach. 1-2 chicken breasts, grilled and thinly sliced. 1 pint of strawberries, sliced. 1 pint of blueberries. 4-5 kiwis, peeled and sliced. 3/4 cup chopped pecans. 1/4 cup granulated sugar. 4 oz crumbled goat cheese* (or crumble some yourself) - substitute for another cheese if desired. 2/3 cup oil (I used canola……use what you like). 4 Tbsp Balsamic Vinegar. 6 Tbsp Strawberry Jam (or any berry variety). 1 1/2 Tbsp poppyseeds.

Saturday, June 21, 2014. Low Sodium Chicken Broth. Medium Onion, Diced. Red Bell Pepper, Seeded And Diced. Green Bell Pepper, Seeded And Diced. Yellow Bell Pepper, Seeded And Diced. Kosher Salt (more To Taste). Corn Tortillas Cut Into Strips. Taste for seasoning and add more of what it needs. Serve soup in a bowl with sour cream, extra diced bell pepper, avocado, cilantro, tortilla strips, and a lime wedge. I found this recipe and I am going to try it this week! I will let you know how it turns out:).

Thursday, August 6, 2015. 6 Months and a Fun Filled Summer! Our little man is now 6 months. He has really taken off with crawling. And refuses to stay in one place. He is now 17lbs, 10oz and growing. His sister so much! He will just watch. Her and whatever she is doing like it is the most interesting. Thing ever. He is at that stage where everything. Goes into his mouth, especially any tags. On blankets or stuffed animals. Tyson has started trying baby food. He loves it and will grab. At the Gateway....

Sunday, June 22, 2014. 2 large boneless Skinless Chicken Breast. 1/2 cup Plain fat-free Greek yogurt. 1/2 cup Light Mayo (Yes you need the mayo-however you could use 1 cup yogurt instead. I suggest experimenting to see which you prefer). 2 Stalks of Celery (More if you like the crunch) – Chopped. 1 Handful of Seedless Grapes (Red or Green) -sliced in half. 4 Stems of Green Onion (Scallions) – Chopped. 1 Bunch of Cilantro- Chopped (You can also use Dill if you aren’t a fan of cilantro. 1 Juice of Lemon.
