Last week I have made kalakandu pongal as prasadam.Here comes the recipe for this tasty pongal. 21/2 cups of Sugar crystals/Kalakandu. 1/2tsp. Cardamom powder. A pinch of Edible camphor(optional). This is simple and healthy stir fry of Amaranth greens/thotakura that go well with rice and roti. 5-6 bunches of fresh&tender stalk Amaranth leaves/thotakura(chopped). 10-12 pods garlic (peeled). 4-5 dry red chillies. These are simple to make - just beat all the ingredients in a bowl for a minute, and stir in the raisins. The recipe calls for dark raisins, but I used the golden ones and it turned out great! 2 cups maida/all purpose flour. 2 tsp baking powder. 1/2 tsp ground cinnamon. 1 cup light brown sugar. 10 tbsp/ 150 gms unsalted butter, softened. 1 tsp vanilla extract. Makes about 3 dozen cookies.
