This cake is perfect if you are looking for something a little different then pumpkin pie. I especially love it the next morning for breakfast. 1 (15 oz) can pumpkin (libby's is best). 1 tsp vanilla extract. 2 1/2 c. granulated sugar. 2 1/2 c. flour. 1 tsp baking soda. 2 tsp ground cinnamon. Preheat oven to 350 degrees F. In a large bowl add oil, applesauce, pumpkin, eggs and vanilla. Beat until creamy. Pour batter into a greased and floured bundt pan.
