SPICY BLACK BEANS AND RICE. 1 medium onion, chopped (1/2 cup). 4 garlic cloves, minced. 2 tablespoons olive oil or cooking oil. 1 (15 ounce) can black beans, rinsed and drained. 1 (14 1/2 ounce) can canned Mexican style stewed tomatoes. 1/8-1/4 teaspoon ground red pepper. 2 cups hot cooked brown rice or long grain rice. 1/4 cup chopped onion (optional). Bring to a boil; reduce heat and simmer, uncovered, for 15 minutes.
