However, we quickly realized that both of these are rather pungent, and that the flavors would likely combine inside the press (even if they're separated by some cheesecloth). We wanted to avoid making a Horseradish Cheddar that tasted like Jalapenos, and vice versa. Even we're not that adventurous! 1 Packet Direct Set Mesophilic Starter.

In the end. there was cheese. In the beginning, a journey to create something bigger than ourselves. Couldn't resist the picture of the ram. If you remember I did a painting for Joel of him petting a ram, well this is the ram and his horns have started to curl. I was able to get a lot of Icelandic sheep milk from my neighbors and made several batches of cheese. When my neighbor had to go out of town she asked me to milk. It was so much fun!
