Sunday, October 17, 2010. I came up with this recipe by accident one morning. I was going to make an omelet, and was out of the usual red peppers, onions, and mushrooms. After digging around in the frig, I put these ingredients together and came up with a winner. I even served this to my husband on Father’s Day because he likes it so much;-). This serves 1, but you can easily double or triple the recipe. 2 egg whites and 1 whole egg, whisked together with salt and pepper (to taste). 1 clove garlic, minced.
