Good things come to those who wait! Hi, my name is Paul Illien. I run the family business called Moyglass Bakery. It was established in 1983 by my parents and I took over in 2002. We are situated in the Slieve Aughty mountains in South East County Galway. I specialise in Organic Sourdough breads, made from flour, spring water a tiny pinch of salt and some seeds on top for decoration. Absolutely nothing else is added to the bread.
