Cheese is not something I cook with much although I LOVE the way it tastes. However, there is definitely a time and place for grown up mac and cheese (aka cheesy pasta at my house). I prefer making this with sharp cheddar cheese, but any variety of cheese would work. Like always, the pasta shape you use can vary. 2 TBS ghee or butter. 1 tsp ground pepper. 1/2 onion, chopped.

Friday, May 18, 2012. What a fun month May is turning out to be! To begin with, the weather has been f-a-bulous. Lots of sun combined with dynamic thunderstorms and temperatures in the 70s. I am still loving my new office and seem to be keeping busy (enough) in the money making department. Many days in the last several weeks I find myself very grateful that I don't work a traditional 40 hour work week (although my erratic work schedule does have it's drawbacks). Time to move on to the rest of my day!

It cooled off yesterday though and is 70 degrees and raining today. Whew! Long story short, we were temporarily stranded, got the car fixed and made it home safe and sound.
