Monday, October 11, 2010. 1 (8 oz.) cream cheese. 1/8 tsp. salt. 6 oz chocolate chips. 1 1/2 c. sifted flour. 1 tsp baking soda. 1/2 tsp. salt. 1 tbsp. vinegar. Combine first four ingredients for batter #1 in small bowl. Beat well. Stir in chocolate chips. Combine all ingredients for batter #2 and beat until blended. Top each cupcake with Chocolate Ganache. 1 1/2 cups heavy cream. 1 tablespoon light corn syrup. 2 tablespoons unsalted butter. 2 1/2 cups semi-sweet chocolate, finely chopped.

My grandson especially likes to help make the Hershey Chocolate Pie. Bake your pie shells ahead of time. When you are ready, have the children join you in making the fillings. Then put in the refrigerator until dessert time. They will be so proud that they helped. 5 Hershey bars with almonds. 1/2 pint heavy whipping cream. 1 baked pie shell. 1 can condensed milk.

Active time:30 min Start to finish:3 1/2 hr. 1 (9-inch) baked pie shell. 2 cups well-shaken buttermilk. 2/3 cup Grade B maple syrup. 6 large egg yolks. 1/4 cup all-purpose flour. 3 tablespoons maple sugar. Accompaniment:lightly sweetened whipped cream. Preheat oven to 325°F. Put pie shell (in pie plate) in a shallow baking pan. Bake until just set in center, about 55 minutes, then transfer pie to a rack to cool slightly. Serve warm or at room temperature. Recipe by Katy Massam.
