Tuesday, December 2, 2008. Boy are my arms tired. I just got back from a week in Central America. Amazing. The people, the food and the vistas were all over the top. It would take me days to explain the whole trip in detail but I'll post up a few adventures as soon as I get the pictures all sorted out. I can't believe how much I fought going down there. Now, after the experience I can't wait to go back. I was truly trying to run from something I could never escape. More on that later. This is for Sarah.

Monday, March 24, 2008. I've found that eggplant can be a great substitute for meat and I found this recipe somewhere online and tweaked it a bit. It's so good! 1 peeled and cubed eggplant. 1 1/4 cup bread crumbs. 1 cup shredded cheddar. 2 eggs slightly beaten. 1 clove of garlic, minced. 2 tbsp olive oil. Woman on the Verge.

Wednesday, April 9, 2008. Tick Tock Tick Tick Tick. It's been a hectic week. I've completed a project that included a roll out to over 79 different countries, a 4 day conference in Orlando (more of that to be posted), two 3 hour road trips, and if I look hard enough a possible partridge in a pear tree. Needless to say it's been an awesome experience. So working 61 out of 72 hours and then driving to Orlando was rough but it has been worth it. Hardest problems in hopes we can help. How awesome is that?

My family really enjoys this. 2 chicken bouillon cubes. 1 1/2 cups hot water. 3 cups fresh chopped broccoli (I used some florets and some of the stalk). 1 cup shredded cheese (i did a mix of cheddar, swiss and boursin). 1/4 cup of flour. 1/2 cup cold water.
