How to Make Soba Noodles | Root Simple
http://www.rootsimple.com/2012/04/how-to-make-soba-noodles.html
Low tech home tech. How to Make Soba Noodles. April 3, 2012. Last month I took an amazing class with author and chef Sonoko Sakai. On how to make soba noodles by hand. She’s a great teacher and I managed to make a halfway decent couple of servings of noodles during the class. Made of buckwheat, soba is gluten free, though beginners start with some all purpose flour added in to make it easier to roll out. Sakai has a couple of soba recipes on her website. There’s a basic one here. And a soba cutting guide:.

The Culture of Food and Drink. Rice Treat Right Off The Grill: Japanese Onigiri. Not everyone uses the word “barbecue” in Japan, but when it comes to cooking over the flame, Japanese have a long tradition — and grilled onigiri. Onigiri is essentially rice shaped into balls. When onigiri is brushed with some soy sauce and grilled until it is brown and crispy, it becomes Yakionigiri (yaki means to grill). In our family, my father would make it using a Hibachi. Person in the mix, offer a grilled onigiri.

In it’s classic form it’s a rice ball enclosing a bit of tasty filling, and finished off with a wrap of nori. Stuffings can include salted salmon, different roes, tuna, but it’s fun to come up with your own. I love stuffing them with boiled chicken mixed with soy and chives.
